Add ingredients to a food processor one at a time, giving plenty of time to incorporate each one. Use almond butter, honey, rolled oats, pepitas, dried cherries or other fruit, chocolate chips, chopped almonds and toasted wheat germ. Roll them into balls and keep in the fridge until you need them. Stuffed omelettes Eggs are a fantastic source of nutrition, and there’s plenty of protein in there to help muscle recovery – it’s one of the best meals for runners. Beat 2 eggs together, then melt some butter into a pan. When the pan is very hot, pour the eggs in, making sure to cover the surface. As the bottom of the egg is setting, let the uncooked egg onto the pan surface. When it’s almost completely set, throw some fillings onto one side and fold the omelette over to finish cooking.
